Subject: A unique source for gustatory properties of organic compounds
Subject: A unique source for gustatory properties of organic compounds
"Die organischen Geschmackstoffe" is a rare source of information about the taste of organic compounds. It gives an insight into early research into artificial sweeteners, many of which are no longer in use. Since it is no longer custom to taste new compounds there has been very little progress in this area. Unfortunately the poor quality of the scan makes the book almost unreadable. Also, the arcane German names of the compounds, some of which are described by their synthesis rather than a useful substance name is an obstacle.
If the technical quality of the scan had been better (entire sections are unreadable) this would be a valuable reference work.
